Recipe(tried): Caribbean Calypso Muffins

CARIBBEAN CALYPSO MUFFINS

2 cups all-purpose flour
1 teaspoon salt
1 1/4 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
2 cups sugar
1 1/4 cups canola oil
4 eggs
1 banana, mashed
1 cup crushed pineapple, drained
1 cup white raisins, boiled in 1/2 cup water, set aside until puffed up, then drain
1 cup walnuts, chopped
1/2 cup macadamia nuts, chopped
1 cup shredded coconut

Sift flour, salt, soda, baking powder, cinnamon, and nutmeg together. Set aside.

In another bowl, mix sugar and oil. Add eggs, one at a time. Mix well. Add to dry mixture, stir well.

Add one at a time, mixing as you go: banana, pineapple, raisins, nuts, coconut. Put in muffin tin with liners.

Bake at 350 degrees for 25 minutes. Makes 24 regular muffins or 18 large ones.
