Recipe(tried): Boston Butt with Bay Leaf, onions and ..

Misc.

Liz,
My 2 favorite way to cook any pork roast (Boston Butt is the most flavorful and juice).
1. For a 2-3 lb roast, put in a pan, cover with thick slices of onion and 3-4 whole bay leaf, and a sprinkling of salt. Cover a bake at 325 for 4-6 hrs. Yes, that is a long time, but it comes out so-o tender and delicious.
2. In a slow cooker put 3-4 peeled and cored an quarter golden delicious apples. put the roast on top and on top of that thick onion slices and 3-4 whole Bay leaf and a sprinkling of salt and 1/2 c apple juice. Let cook for 8-10 hrs. Serve the apples with the roast, they have a lovely savory flavor.
