GIANT CHOCOLATE CHIPPERS
"Guaranteed to be a hit at your family reunion. To serve, ask family members to break off a piece and pass the cookie."
1 cup sugar
1 cup firmly packed brown sugar
1 cup margarine or butter, softened
1 cup oil
1 egg
2 teaspoons vanilla
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tarter
1 teaspoon salt
1 cup quick-cooking rolled oats
1 cup coconut
1 cup crisp rice cereal
1 (12 oz.) pkg. (2 cups) chocolate chips
Heat oven to 350 degrees F. Line cookie sheets with foil.
In large bowl, beat sugar, brown sugar and margarine until light and fluffy. Add oil, egg and vanilla; beat well. Lightly spoon flour into measuring cup; level off. Add flour, baking soda, cream of tartar and salt. Stir in oats, coconut, cereal and chocolate chips.
Press scant 1 cup dough into 6-inch circle on foil-lined cookie sheet. Repeat with remaining dough, placing cookies at least 2 1/2 inches apart.
Bake at 350 degrees F for 16 to 22 minutes or until light golden brown. Cool completely on cookie sheets to prevent breaking.
Makes 8 large cookies; 32 servings
