CAESAR TORTELLINI SALAD WITH CHICKPEAS
1 (9 oz.) package tortellini
1 (15 oz.) can chickpeas, drained
1 cup julienned carrots
1 cup finely sliced celery
1 cup finely sliced red bell pepper
1/4 cup pine nuts
1/3 cup chopped fresh parsley
your favorite Caesar dressing
Cook tortellini according to package directions, drain and cool in strainer under cold running water. Set aside to drain.
Combine remaining ingredients with your favorite Caesar dressing. Toss with tortellini and serve.
Servings: 4
