Recipe: Fresh Herb Vinaigrette

Salads - Assorted
FRESH HERB VINAIGRETTE

1 cup loosely packed parsley
1 tablespoon fresh basil leaves, cut into fine strips
2 tablespoons snipped fresh chives
1 small garlic clove
6 small shallots
3/4 cup salad oil
1/4 cup water
3 tablespoons raspberry vinegar
1 1/2 teaspoons Dijon mustard
1 teaspoon sugar
2 teaspoons chopped fresh chervil
2 teaspoons chopped fresh tarragon
1/2 teaspoon salt
Fresh ground pepper, to taste

Mince parsley, then set aside with basil and chives.

In food processor or blender, combine garlic and shallots and finely chop. Add oil, water, vinegar, mustard and sugar. Add all spices.

Note: Keeps well in refrigerator.

Makes 1 3/4 cups; servings: 8-10
