Recipe(tried): Chicken Cassrole Supreme and Spinach-Ricotta Pie

Good Morning Everyone!

Today is my "chores" day and I started quite early because I want to go out to Stein Mart out in Tampa by noon. The washer and dryer are going full speed and I popped in here to post one of my favorite casseroles, Chicken Cassrole Supreme. It's one of those easy and tasty ones and you just pop it in the oven. I am pretty sure I have posted it before.

For lunch, I will be making a Spinach Ricotta Pie which I have been craving since last week. I will post that one too.

We sure are needing some rain down here, everything is so parched and dry looking...where is that water? Maybe with hurricane season starting in June we will finally be seeing some water, it usually rains around that time.

Chicken Casserole Supreme

4 skinless, boneless chicken breasts
1 can cream of mushroom soup
3 Tbsp. olive oil
3 garlic cloves, pressed
salt and pepper to taste
1 (16 oz.) carton sour cream
1 cup chicken broth (Superior Touch)
1 cup sliced fresh mushrooms
1/2 large onion, chopped
8 oz. herb-seasoned stuffing mix
1/4 cup melted butter
1 (10 oz.) pkg. frozen broccoli spears, thawed and drained

Season chicken with salt and pepper. In a skillet, saute the chicken in the oil with the onions and mushrooms til browned. Add garlic and saute for 1 more min. Cube meat and add to a bowl with all the skillet contents, sour cream and soup. Blend well. Pour mixture into a 2-qt. casserole dish. Mix together stufing mix, butter and broth. Set aside. Lay broccoli on top of chicken in casserole, place stuffing evenly over and bake for 45 min. at 350F. Serve with cranberry sauce and a salad and add a veggie to supper.

SPINACH-RICOTTA PIE

1 (10 oz.) pkg. frozen chopped spinach
3 tbsp. olive oil
1 medium onion, chopped
3 garlic cloves, minced
3 large eggs
3/4 cup Parmesan cheese
2 cups ricotta cheese
8 oz. mozzarella cheese, grated
Dash oregano
Dash nutmeg
Salt and pepper to taste
1 unbaked pie shell

Cook spinach according to package directions. Drain well and set aside.

Heat oil in a skillet and saute onion. At the last minute, throw in the garlic. Stir well.

In a separate bowl, beat the eggs slightly, add the cheeses, mix well. Add the sauteed veggies and the spinach along with the spices, salt and pepper. Pour into the pie shell.

Bake at 375 degrees for 30-40 minutes or until set.
