Recipe: Eggnog Cake (made without eggnog, using cake mix)

EGGNOG CAKE

"Although there's no eggnog in this cake, tasters say the flavor is that of eggnog."

1/2 cup coarsely chopped pecans
1 (18 1/4-ounce) package butter recipe golden cake mix
1/3 cup sugar
1/2 tablespoon nutmeg
1 cup sour cream
2/3 cup vegetable oil
4 large eggs

Preheat oven to 350 degrees. Spray a 12-cup Bundt pan with vegetable cooking spray. Sprinkle pecans evenly in bottom of pan.

In a large mixing bowl, combine cake mix, sugar, nutmeg, sour cream, oil and eggs, and blend with an electric mixer on low speed for 1 minute. Increase speed to medium-high and beat for 4 minutes. Pour the batter into the prepared pan.

Bake 45 to 50 minutes until a cake tester inserted in the middle of the cake comes out clean. Let cake cool in the pan. Invert the cake onto a cake plate.
