CHICKEN-COTTAGE CHEESE SALAD
1 (3 oz.) package lime gelatin
1 cup hot water
1/2 cup cold water
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 cup mayonnaise
1 cup creamed cottage cheese
1/2 cup diced celery
1 cup diced cooked chicken
1/2 cup finely chopped pickles
Dissolve the gelatin in 1 cup hot water and add 1/2 cup cold water, lemon juice, salt and mayonnaise. Blend well and chill until partially set.
Whip until light and fluffy, then fold in remaining ingredients. Place in mold and chill until firm.
Unmold and serve on lettuce leaves.
