Recipe: Marinated Shrimp and Cucumber

MARINATED SHRIMP AND CUCUMBER

1 1/4 tablespoons olive oil
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
3 pounds frozen, peeled cooked shrimp, thawed
3/4 cup sliced cucumber
1/2 cup red onion, chopped
1/2 cup red wine vinegar
1/2 cup olive oil
1/2 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon red pepper flakes
1/4 teaspoon sugar
3 cloves garlic, crushed
1 (3 ounce) jar capers, drained
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice

Mix together olive oil, basil, and oregano; set aside.

In a separate bowl, combine shrimp, cucumber and red onion.

In a small saucepan, combine vinegar, olive oil, coriander, salt, pepper, pepper flakes, sugar and garlic. Bring to a boil and simmer four minutes. Remove from heat and cool.

Pour cooled seasoned liquid over shrimp mixture. Stir in basil, oregano and olive oil mixture. Add capers, Worcestershire sauce and lemon juice.

Cover and chill 8 hours. Drain as needed.
