Recipe: Grilled Chicken Caesar Salad with Caesar Croutons (using salad dressing)

GRILLED CHICKEN CAESAR SALAD



FOR THE CHICKEN:
2/3 cup and 1/2 cup Wish-Bone Olive Oil Caesar Salad Dressing, divided use
1 tablespoon lemon juice
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
4 boneless, skinless chicken breast halves (1 pound)
FOR SERVING:
1 large head romaine or green leaf lettuce, torn into pieces
2 cups Caesar Croutons (recipe follows) or your favorite croutons
OPTIONAL GARNISHES:
Grated Parmesan cheese
Shredded carrot
Red bell pepper strips

TO MARINATE THE CHICKEN:
In large, shallow non-aluminum baking dish or plastic bag, combine 2/3 cup olive oil Caesar dressing, lemon juice and basil. Add chicken; turn to coat. Cover, or close bag, and marinate in refrigerator, turning occasionally, up to 3 hours.

WHEN READY TO COOK:
Remove chicken, reserving marinade. Bring the marinade to a rolling boil and continue boiling 1 minute, while stirring, to kill any bacteria transferred from the raw chicken juices (or discard the used marinade and use fresh dressing for basting).

Grill or broil chicken, turning once and brushing occasionally with reserved marinade, until chicken is done.

TO SERVE:
Divide lettuce and croutons on 4 plates. Slice and arrange 1 chicken breast on each salad. Drizzle with remaining 1/2 cup dressing. Sprinkle with cheese and, if desired, shredded carrot and red pepper strips.

*Also terrific with Wish-Bone Robusto Italian, Italian or Lite Italian Dressing.

Makes 8 servings (recipe may be halved)

8 cups Italian bread cubes
2/3 cup Wish-Bone Olive Oil Caesar Salad Dressing*

Preheat oven to 400 degrees F.

In a large bowl, toss bread cubes with dressing. On baking pan, arrange bread cubes.

Bake, turning once, for 10 minutes or until golden.
