GRANATO'S SHRIMP FETTUCCINI
1 package of fettuccini, uncooked
1 lb medium size shrimp, raw and clean
4 tbsp olive oil
2 large yellow onions, sliced thin
1 large fennel bulb, sliced thin
2 garlic cloves, crushed
1 tsp red pepper flakes
2 cups heavy (whipping) cream (or half and half)
1/2 cup grated romano cheese
salt and pepper (to taste)
fresh italian parsley
Boil the Fettuccini following package instructions, drain and coat with a little oil.
In a large saute pan over high heat, cook the onions and fennel in the olive oil until tender.
Add garlic, shrimp and pepper flakes to the saute pan and cook until shrimps turn color or about 5 minutes.
Lower the heat to medium and add the cream and bring to a simmer. Add the cheese and stir until well blended and melted.
Toss the pasta with the sauce and serve hot with fresh chopped parsley and more cheese if needed.
