Chicken Francesca

4 boneless chicken breasts, cut in 1/2
1 cup milk
1 cup seasoned breadcrumbs
1/2 cup Parmesan cheese
2 tbsp chopped parsley

1 cup olive oil
1 sliced lemon
1/4 cup lemon juice
1 cup chicken broth
1 cup white wine

Soak chicken in milk about 10 minutes. Mix together the breadcrumbs, Parmesan and parsley. Remove chicken from milk and coat with breadcrumb mixture. Add oil to skillet and brown chicken lightly on each side. Place chicken in buttered baking pan, and season with salt and pepper. Place one slice of lemon on each chicken piece. With just 1 tbsp. of oil in skillet, add wine and broth and boil till its halved. Pour over cutlets and bake at 350 degrees 25 minutes or until chicken is done.
