HONEY-MUSTARD CHICKEN NUGGETS
1 tsp. ground coriander
1/8 tsp. salt
1/8 tsp. pepper
1 pound unbreaded chicken breast nuggets
1/4 cup chopped shallot
1 large clove garlic, minced
1/2 cup canned low sodium chicken broth, undiluted
3 tbsp. honey mustard
Combine first 3 ingredients: stir well. Add chicken nuggets, tossing to coat.
Coat a large nonstick skillet with cooking spray; place over medium high heat until hot. Add shallot and garlic; saute 1 minute.
Add chicken, and cook 10 minutes or until chicken is tender, stirring frequently. Remove chicken from skillet; drain on paper towels. Wipe drippings from skillet with a paper towel.
Add broth and mustard to skillet; cook over medium heat 3 minutes or until thickened and bubbly, stirring constantly.
Add chicken; cook until thoroughly heated.
