Recipe: Chocolate Chip Nut Bars with Meringue Topping (2)

CHOCOLATE BIT BARS

3/4 cup shortening
1/2 cup white granulated sugar
1 1/2 cups brown sugar, divided use
2 cups flour
1 tsp. salt
1/2 tsp. baking soda
1 tbsp. water
2 egg yolks, beaten
1 (12 oz.) pkg. chocolate chips
2 egg whites
1 tsp. vanilla
1/4 cup chopped nuts

Cream together shortening, white sugar and 1/2 cup brown sugar together; set aside.

Sift together flour, salt and baking soda and add to first mixture. Then add 1 tablespoon water and egg yolks. Pack mixture in a greased 9x13-inch pan. Sprinkle with chocolate chips. Press chips in a little; set aside.

Beat egg whites, the remaining 1 cup brown sugar and vanilla until slightly foamy. Pour over chocolate chips. Sprinkle with nuts.

Bake at 350 degrees F for 20-25 minutes.

CHOCOLATE CHIP BARS
Makes 4 to 4 1/2 dozen bars, 1-inch each

FOR THE COOKIE BASE:
1 cup margarine, softened
1/2 cup brown sugar
1/2 cup white granulated sugar
3 egg yolks
1 tbsp. cold milk
1 tbsp. vanilla
2 cups sifted flour
1/4 tsp. salt
1/4 tsp. baking soda
1 (6 oz.) pkg. chocolate chips
Meringue Topping (recipe follows)

Cream shortening and brown and white sugars. Add egg yolks and beat well. Add cold milk and vanilla alternately with dry ingredients. Spread evenly in well greased 11x16-inch pan. Sprinkle with chocolate chips.

Spread meringue topping over cookie base.

Bake at 350 degrees F for 25 minutes. Cool before cutting.

MERINGUE TOPPING

3 egg whites
1 cup brown sugar
1 cup chopped pecans

Beat egg whites until stiff; add brown sugar gradually. Fold in pecans carefully.
