Recipe: Wine-Pickled Turnips (to accompany braised meats) (food processor)

WINE-PICKLED TURNIPS

2 1/2 pounds seedless black or red grapes
2 tablespoons sugar
2 tablespoons kosher salt
One bottle (750ml) dry red wine
2 cups good-quality red wine vinegar
3 pounds turnips, peeled and cut into very thin matchsticks, 2 to 3 inches long

In a food processor, process grapes until chopped into small but still distinct pieces suspended in their liquid. (Do not puree.) Set aside.

In large mixing bowl, dissolve sugar and salt in 1 cup wine. Stir in remaining wine and vinegar. Add turnips and chopped grapes and mix thoroughly.

Cover and refrigerate at least 2 days. This keeps well for at least 3 months.

Serve as an accompaniment to braised meats.

Makes 6 to 7 cups
