Recipe: Chocolate Mint Pie with Mint Meringue (Robin Hood Flour recipe, 1950's)

FOR THE CHOCOLATE CREAM FILLING:
2/3 cup sugar
1/2 cup sifted all-purpose flour
1/4 tsp. salt
3 cups milk
2 squares (1 ounce each) unsweetened baking chocolate
2 egg yolks, slightly beaten
1 1/2 tsp. vanilla
1 tbsp. butter
1 (9-inch) baked pie shell (recipe follows)
Mint Meringue (recipe follows)
Mix sugar, cornstarch and salt in top of double boiler; add milk gradually, stirring until smooth. Add chocolate, cut into pieces. Cook over boiling water for about 15 minutes, stirring constantly.
Mix small portion with egg yolks, return to double boiler and cook 2 minutes longer.
Remove from heat, add vanilla and butter; cool. Fill baked pastry shell and top with mint meringue.
PASTRY SHELL
1 cup sifted all-purpose flour
1/2 tsp. salt
6 tbsp. shortening, divided use
2 tbsp. cold water
Mix flour and salt in a bowl. Cut in half of shortening until mixture resembles meal; then remaining shortening particles are size of peas. Add water, mixing with fork or hands.
Shape dough into ball; flatten with firm edges. Roll on lightly floured cloth-covered board. Place in 9-inch pie pan loosely and cut one inch larger than pan. Fold edge under, moisten rim of pan and flute a high edge. Prick bottom and sides of pastry with a fork.
Bake in very hot oven (475 degrees F) 8-10 minutes. Cool.
MINT MERINGUE
2 egg whites
1/8 tsp. cream of tartar
1/8 tsp. peppermint extract
1/2 cup powdered sugar
2 to 3 drops red coloring
Beat whites with cream of tartar until frothy. Add extract, then sugar gradually, beating after each addition.
Add coloring, blending well until mixture is a delicate pink. Pile lightly on top of cooled filling, making sure to spread to crust all around.
Bake in a hot oven (400 degrees F) for 8 minutes.
Makes 1 (9-inch) pie
