Recipe: City Chicken

This was included in my Woman's Club cookbook and was a treasured family recipe. I remember city chicken well and this sounds just like I remember although I have not tried this one. Maybe I will!

CITY CHICKEN

1 lb. boned veal shoulder cut into 1" cubes
1/2 lb. lean pork cut into 1" cubes
Salt and pepper to taste
2/3 cup fine dry bread crumbs
2 eggs, beaten
1 onion, minced
1/4 cup butter or margarine
1/2 cup hot water

Seasom meat with salt and pepper. Alternate cubes of pork and veal on 6- inch wooden skewers (ask butcher for some). Roll first in bread crumbs, then dip in egg; roll again in crumbs. Saute onions in large skillet with butter until tender. Add meat and brown on all sides. Add water; cover. Bake at 350 degrees for 1 1/2 hours. Makes 6 to 8 "legs".
