ROAST PORK WITH SWEET AND WHITE POTATOES
1 boneless pork loin roast (3 1/2 pounds)
1 large garlic clove, cut into slivers
Fresh thyme leaves or 1 teaspoon dried
2 tablespoons reduced-sodium soy sauce
1 teaspoon Worcestershire sauce
Nonstick cooking spray
1/2 teaspoon freshly ground black pepper
2 each: baking potatoes and sweet potatoes
2 tablespoons cup olive oil
Cut tiny slits in surface of pork. Insert garlic and thyme. Place pork in plastic food-storage bag. Add soy sauce and Worcestershire. Seal bag. Refrigerate and marinate 1 hour or overnight.
WHNE READY TO COOK:
Heat oven to 400 degrees F. Lightly coat small baking pan with nonstick spray.
Remove pork from bag; place on rack in roasting pan. Discard leftover marinade. Sprinkle pork with pepper. Pour 1/2 inch hot water into pan.
Roast pork 1 hour or until pork registers 160 on an instant-read thermometer. Let rest 10 minutes before slicing.
Meanwhile, cut potatoes in half lengthwise; brush each with oil. Place, cut side down, in prepared baking pan. Add to oven the last 25 minutes of pork roasting time. Remove from oven when pork is ready to serve or when potatoes are fork-tender.
