Crockpot Multi-Bean Soup

1 package (20 ounces) of 15 or 16 dried bean soup mix, sorted & rinsed
1/2 pound smoked beef sausage ring, cut into 1/4-inch slices
1 large onion, chopped (1 cup)
10 cups water
1 1/2 tsp dried thyme leaves
1 tsp salt
1/2 tsp pepper
2 medium carrots, shredded (1 1/3 cups)
1 can (14 1/2 ounces) diced tomatoes, undrained

Mix all ingredients except carrots & tomatoes in 5-6 quart slow cooker. Cover & cook on high heat setting 8 - 10 hours or until beans are tender. Stir in carrots & tomatoes. Cover & cook on high heat setting about 15 minutes longer or until hot.
