APPLE CRISP A LA AUTUMN MOON CAFE
FOR THE TOPPING:
1 3/4 cups all-purpose flour
1 1/4 cups oatmeal
2 1/4 cups plus 2 tablespoons sugar, divided use
1/8 teaspoon allspice
1/8 teaspoon nutmeg
2 teaspoons plus 1/8 teaspoon cinnamon, divided use
1 cup unsalted butter, chilled
FOR THE APPLES:
5 Granny Smith apples, peeled and sliced
2 teaspoons fresh lemon juice
Vanilla ice cream (to serve)
Preheat oven to 350 degrees. Spray 8x8-inch pan with vegetable oil spray.
TO PREPARE THE TOPPING:
In a large mixing bowl, combine flour, oatmeal, 2 1/4 cup sugar, allspice, nutmeg and 1/8 teaspoon cinnamon. Using large holes of grater, grate butter into bowl. Using fingertips, mix just until it begins to come together; don't over mix.
TO PREPARE THE APPLES:
In another large bowl, toss apples with remaining 2 tablespoons sugar, 2 teaspoons cinnamon and lemon juice.
TO BAKE:
Transfer apple mixture to pan. Sprinkle with topping.
Bake, uncovered, for 30 to 35 minutes, or until topping is golden brown and apples are tender.
Serve warm with scoop of vanilla ice cream.
