Recipe(tried): Cuban - Vaca Frita (Fried Beef)
Misc. Sorry, I am late. I have been busy with family for the last couple of days. But I love Cuban food and I have several recipes. My absolute favorite is called "Vaca Frita" which means "Fried Cow". Whenever I make a beef roast for my family I always buy the roast twice as big as I need because I use the leftovers to make this dish. The original recipe calls for a 2 1/2 pound flank steak, but it works wonderfully on leftover roast. This is what I do. I take the leftover cooked roast and shred it, just using my fingers, and then place it a large nonreactive bowl. I then squeeze 1/4 cup fresh lemon juice, 1/4 cup fresh lime juice and pour it right onto the meat. Then you add 3 finely chopped cloves of garlic and some salt and pepper to taste and stir it around. Then all you do is refrigerate this for at least 1 hour or overnite. (And for me it usually 1 hour if that long). You then remove the meat from the marinade and squeeze out the excess liquid. Heat a large skillet with 1/2 cup of olive oil over med-high heat and then cook the beef shreds, stirring, about 6 to 8 minutes. Then you add 1 large onion that has been cut in half and then thinly sliced, cook for about another 5 minutes. Keeping stirring until the beef is slightly crisped, about another 5 minutes. Sprinkle with parsley and serve over white rice. My kids adore this as well. I hope this helps.
