Recipe: Carbohydrate-free Nachos
Appetizers and SnacksCARBOHYDRATE-FREE NACHOS
1 lb. ground beef
1 pkg taco seasoning mix
pork rinds
shredded nacho cheese
chopped jalapenos (optional)
Brown ground beef in a skillet; drain and stir in (dry) taco seasoning mix.
Place pork rinds in a single layer on a plate. Cover the rinds with the meat mixture, then the shredded nacho cheese. Sprinkle jalapenos over the top, if using.
Microwave for about 1 minute or until cheese is melted.
Note from source: The seasoned meat helps you forget the refried beans. And you don't have to use jalapenos if you don't like them that hot. Or you can toss on Tabasco or low carb salsa.
