Recipe: Denver Sandwich for One (ham, eggs, English muffin)

"This open-faced sandwich is great for those hectic days or lazy evenings after work."
1 egg
2 tablespoons chopped cooked ham
2 tablespoons skim milk
1/4 teaspoon onion powder
1/4 teaspoon dried basil leaves
1 teaspoon margarine or butter
1 tablespoon chopped green bell pepper
2 thin tomato slices (optional)
1 English muffin, split, toasted
In small bowl, combine egg, ham, milk, onion powder and basil; beat well; set aside.
Melt margarine in small skillet over medium heat. Add bell pepper; cook 1 to 2 minutes or until crisp-tender.
Reduce heat to low; add egg mixture to skillet. Cook until set but still moist, stirring occasionally.
Place tomato slice, if using, on each muffin half; top each with egg mixture.
MICROWAVE D1RECTIONS:
Prepare egg mixture as directed. In small microwave-safe casserole, microwave margarine on HIGH for 15 to 30 seconds or until melted. Add bell pepper; microwave on HIGH for 30 to 60 seconds or until crisp-tender. Add egg mixture. Microwave on HIGH for 1 to 1 1/2 minutes or until set but still moist, stirring every 30 seconds. Place tomato slice on each muffin half; top each with egg mixture.
