Recipe: Mini Muffulettas (using English muffins)

1 (6 oz.) jar marinated artichoke hearts, drained and chopped
1/4 cup chopped roasted red peppers
4 oz. provolone cheese, chopped
2 oz. salami, chopped
1/3 cup pitted ripe olives, sliced
1/4 cup Italian dressing
4 Thomas' English Muffins, split and toasted
In small bowl mix artichokes, red peppers, cheese, salami, olives and dressing. Spoon about 1/4 cup on each muffin half.
Makes 4 servings
