Recipe: Roast Beef Wraps with Horseradish Slaw

ROAST BEEF WRAPS WITH HORSERADISH SLAW

1/4 cup light mayonnaise
3 tbsp. prepared white horseradish
1 tbsp. distilled white vinegar
1/4 tsp. salt
1/4 tsp. coarsely ground black pepper
1/4 tsp. sugar
8 oz. shredded cabbage mix for coleslaw (half 16 oz. pkg)
4 burrito size (10-inch diameter) flour tortillas, warmed
2 medium tomatoes, thinly sliced
8 oz. thinly sliced deli roast beef

In large bowl, mix mayonnaise, horseradish, vinegar, salt, pepper and sugar. Remove half of mayonnaise mixture to cup.

Toss cabbage with mayonnaise mixture in bowl.

With small spatula, spread some of the reserved mayonnaise mixture on one side of each tortilla. At one edge of each tortilla, arrange some tomato slices, roast beef and cabbage mixture. Roll each tortilla jelly-roll fashion.

Makes 4 sandwiches
