Recipe: Blackened Chicken Breasts

BLACKENED CHICKEN BREASTS

This spice mix may be used on chicken, fish and lean beef.

1 Tablespoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
3/4 teaspoon white pepper
3/4 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon dried whole thyme
1/2 teaspoon dried whole oregano
4 boneless chicken breasts
1 Tablespoon oil
Lemon wedges for garnish

Combine all ingredients except chicken breasts and oil. Coat each chicken breast with about 1 teaspoon of the mixture. Store remaining spice mixture for another use.

In a large, nonstick skillet, cook chicken in hot oil over medium heat. Turn chicken over when first side is browned (about 7 minutes), and cook until done.

Serve on a Kaiser roll, garnished with lemon wedges.
