Recipe: Easy Buttermilk Buckwheat Pancakes

Easy Buttermilk Buckwheat Pancakes
1egg
1 cup buttermilk
3 Tablespoons melted butter or canola oil
1/2 cup buckwheat flour
2 tablespoons cornmeal
1/4 all-purpose flour
1Tablespoon honey, molasses or brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
Lightly beat egg and stir in buttermilk and fat. Blend dry ingredients together. Stir dry ingredients into liquid being careful not to overmix. It will be a little lumpy. Bake on griddle that has been sprayed with non-stick spray. Serves 2
