NEW YORK DELI CREAMY COLE SLAW
5 lbs shredded cabbage
6 thinly sliced scallion (white & green)
2 1/2 cups of mayonnaise
1 cup of sugar
1/2 cup rice wine vinegar
3 garlic cloves, crushed
2 tablespoons salt
1 tablespoon pepper
2 tablespoons of caraway seeds (optional)
Place cabbage and scallions in large bowl.
In separate bowl whisk together the mayo and the next 6 ingredients. Pour over the cabbage and scallions. Toss well.
Allow to marinate for at least 30 minutes before serving.
