Recipe(tried): Easy inexpensive finger food - Sushi and Fresh Spring Rolls

I am an expat, living in germany and I often have to host an number of people, with little notice.

My suggestion is sushi. After a couple of trial runs it is VERY easy to make.

Get you sushi rice from an Asian shop - its much cheaper than the supermarket, as are the nori sheets.

You can fill them with anything.. I often use cooked chicken mixed with mayonnasie and a flavor, such as mustard with honey or red curry. Or there is straight vegetable, peppers, carrots, avacodo. Smoked salmon and cooked prawns are nice, but can get expensive!

The best thing about sushi is it can be made in advance and doesn't need to be reheated, for a spring wedding its nice and light and refreshing.

My other suggestion is Vietnamese spring rolls... again a no cook solution.

You use spring roll sheets (I use the rounds of rice paper)
I prepare the filling of cabbage, carrot, spring onion, cilantro, chinese bbq pork, bean sprouts..beforehand then soak the sheets and roll each one up. You must make sure they are covered with a damp tea towl to avaid them drying out.

They are then served with soy sauce, sweet chilli sauce and satay sauce. YUM
