FRUIT FILLED CAKE BARS
2 1/2 cups all purpose flour
1 1/2 cups white granulated sugar
1 1/2 teaspoon baking powder
2 eggs
1 {11 oz} can mandarin oranges, undrained
1 1/2 {10 oz} package of frozen strawberries, undrained and partly thawed
3/4 cup chopped nuts {walnuts}
1 1/2 cups flaked coconut
FOR THE GLAZE:
3/4 cup white granulated sugar
1/2 cup butter
1/4 cup milk
1/2 teaspoon vanilla
Preheat oven to 350 degrees F. Grease a jellyroll pan.
In a large mixing bowl combime all ingredients for the cake except the coconut and glaze. Mix at a slow speed until mixed rise speed to med. and beat for two minutes, scrape the bowl often. Pour into the jellyroll pan; spread to the edges. Sprinkle the coconut all ower the batter.
Bake at 350 degrees F for 25 to 30 minutes or until the center springs back when lightly touched.
WHILE THE CAKE IS BAKING, PREPARE THE GLAZE:
In a meduim sized pan, add all the ingredients for the glaze mix well and boil 2 minutes stirring often.
Spread the warm bars while just out of the oven with the glaze. Cut into 36 to 48 bars
I just love this recipe and don't make it often.
