My husband has acid reflux with gerd real bad. The Olive garden likes to kill his stomach. So I have to be careful using tomatoes in cooking. I usually can my own tomatoes and add a splash of lime or lemon juice to every jar before canning it. You can also add it to the sauce as you make it. It doesn't take much. To a quart size jar full all you have to add is about a full tsp full of lemon/lime juice. A acid added to a acid neutralizes one another. Adding sugar only make the tomatoes sweet.
