Hi Mary:-) I,too, often find the taste of tomatoes too acidic for my liking. I have successfully used a suggestion from Giada De Laurentiis which is to add unsalted butter, a tablespoon at a time, to your spaghetti sauce etc. until the taste is less sharp or acidic. I have used this several times in various sauces. I find it works especially well when I use Muir (?sp.) Glen fire roasted tomatoes which I find to be even more acidic than many other canned tomatoes but which I want for the fire roasted flavor in some recipes. Personally, I never found adding sugar helped with this problem and was happy to find that the unsalted butter worked well, at least from my perspective. Let me know what you think when you've had a chance to give it a try.
