Recipe: Raisin-Filled Cereal Bars (using Quaker 100% Natural Granola Cereal)

FOR THE RAISIN FILLING:
1/2 cup granulated white sugar
1 tbsp. cornstarch
2 1/2 cups raisins
1 cup water
2 tablespoons lemon juice
FOR THE CRUMB MIXTURE:
1 cup packed brown sugar
3/4 cup margarine, softened
2 cups flour
1/2 tsp. baking soda
2 cups Quaker 100% Natural Granola Cereal
1 tbsp water
Preheat oven to 350 degrees F. Grease and flour a 13x9x2-inch baking pan.
In a saucepan, mix together white sugar and cornstarch. Stir in raisins and 1 cup water. Cook and stir over medium heat until thick and bubbly.
Remove from heat and stir in lemon juice. Set aside to cool.
Cream together brown sugar and butter; set aside.
Stir together flour and baking soda. Add to butter mixture with granola; mix well. (Mixture will be crumbly). Pat half of the crumb mixture into the prepared pan. Spread on the cooled raisin filling.
Add one tablespoon water to remaining crumb mixture; sprinkle atop filling. Lightly press with hand.
Bake at 350 degrees F for 30-35 minutes.
Cut into 32 bars while warm.
