Recipe(tried): French Canadian Pea Soup

FRENCH CANADIAN PEA SOUP

2 1/2 quarts water
350 grams of whole yellow peas, washed and drained
1/2 lb salt pork
2 medium onion, chopped)
2 carrots, chopped
1/4 cup chopped celery
1/4 cup chopped parsley
1 teaspoon savory
2 bay leaves

Combine above ingredients in a big pot. Bring to a boil for 2 minutes. Remove from heat and let rest for1 hour.

Add:
1 ham bone

Bring to a boil again, lower heat and simmer for 1 to 1 1/2 hours or until peas are cooked.

Remove ham bone and leaves. Add salt and pepper to taste.
