Recipe(tried): Rooster's Cajun Spice Mix (Blackening Spice Mix)

Many years ago I complained in Earls - On- Top in Vancouver, how poor, the blackened spice mix was that they were using. I faxed the chef this mix.
10 years later I met him in Calgary and he remembered my name and reminded me about the incident. I think the Albino Rhino Pale ale had dimmed my memory.
Sorry for the secret ingredient which I found in Paul Prudhomme's (The Man) commercial mix.
Just as an interesting point While Chef Prudhomme was chef at The Commanders Palace in New Orleans, Emeril was working under him. GO CAJUN!

ROOSTER'S Cajun Spice Mix
June 2010 edition

- cooks spoons for large quantities - for smaller batches use 'uhm?....
smaller spoons!

2 ground oregano
2 dry basil
1/3 ground cayenne pepper
1/3 ground white pepper
1/3 ground black pepper
1 salt
1 ground cumin
1/2 ground thyme
2 thyme buds (unground thyme)
1 onion powder
1 garlic powder
6 paprika
1 dry parsley
1/4 fennel seeds
1/4 secret ingredient

Sometimes all the ingredients are not available when you need a batch in a hurry.
You can't make it without salt or paprika or thyme though.
I use the same recipe for blackened spice as I do for the Gumbo.
Sorry about the secret bit. It works fine without it.
