Recipe: Easy Clam Chowder

2 slices bacon, cut in small pieces
1 cup potato (about 1 or 2 medium-size potatoes), peeled and cut in chunks
1 medium onion, chopped
1 (16 oz) can clams, drained with juice set aside
water
1 teaspoon salt
2 cups reduced-fat (2%) milk
In a large saucepan, cook bacon, potato, and onion until the bacon is crisp and onion is tender.
In a measuring cup, add water to the reserved clam juice to measure one cup in total. Add mixture to saucepan. Stir in clams, potato and salt into the saucepan. Cover and simmer for 10-15 minutes, until the potato is tender.
Stir in milk and heat thoroughly on a low flame. Important: Once milk is added, do not bring soup to a boil.
