Houston's Tortilla Soup

One of the most requested local recipes for tortilla soup in Austin is from Houston's. But the restaurant has a policy of not releasing its recipes. However, many years ago former American-Statesman consumer columnist Ellie Rucker talked one of the chefs into discussing the ingredients. Here's the general list:

Cooked chicken white meat

Tortillas chips, pulverized (finely chopped)

Fresh chicken stock

Onions

Bell peppers

Fresh garlic

Seasonings: cumin, chili powder and black pepper.

Small amount of flour and butter for thickening, although most of the thickening is done with the pulverized tortilla chips. Cilantro and grated cheese for garnish.
