Recipe: Fresh Strawberry Ice Cream (ice cream machine)

FRESH STRAWBERRY ICE CREAM

2 pints strawberries
1 1/2 cups sugar, divided use
2 cups heavy (whipping) cream
2 cups milk
1 vanilla bean, split
4 to 5 egg yolks

Wash and hull strawberries; then mash them together with 1/2 cup sugar and let them stand for an hour.

Combine heavy cream and milk in a saucepan; add the remaining 3/4 cup sugar and the vanilla bean. Cook and stir over medium heat until the sugar dissolves but the mixture is not boiling.

Whisk together egg yolks in a bowl; then whisk in about 1 cup of the hot milk mixture. Slowly pour this into the saucepan. Continue to whisk until the mixture thickens, about 5 minutes. Do not boil.

Remove the vanilla bean and stir in the mashed strawberries. Freeze in an ice cream maker according to manufacturer's directions.
