Hello Elaine and anyone that's been following this thread,
I'm not sure if you found the answer to your Cheesecake on a Stick request yet, I've been looking in my travels and all I could find so far was a picture of it. Looks sinfully delicious! Here's how I think these might be made - the popsicle stick is inserted into the slices of cheesecake, the slices are frozen before being dipped in melted chocolate for coating, then the coated slices would be thawed before serving (I think you'd have to keep them chilled during thawing to prevent sweating). I assume that any candy dipping chocolate would work for this - of course, rolling them in chopped nuts or coating the end in colored sprinkles before the chocolate sets would be a nice extra too!
If anyone has made this we'd love to hear from you.
