Recipe: Sloppy Joe Casserole (using shell or elbow macaroni)

SLOPPY JOE CASSEROLE

1 (8 oz.) pkg. shell or elbow macaroni
1 lb. ground chuck
1 envelope sloppy Joe mix
1 1/2 cans (8 oz. each) tomato sauce
1 (6 oz.) can tomato paste
1 1/4 cups water
1 (16 oz.) carton cottage cheese
1/2 cup grated cheddar cheese

Cook macaroni according to package directions; drain.

Cook hamburger, then add sloppy Joe mix, tomato sauce, paste and 1 1/4 cups water.

In a 2 1/2 quart casserole, layer 1/2 of the macaroni, half of the cottage cheese and half of the meat sauce. Repeat and top with cheddar cheese.

Bake uncovered 40-50 minutes in a 350 degree F oven.

Makes 6-8 servings
