Recipe: Veggie Tuna Bagel Sandwiches (make ahead)

"Young children tend to prefer simple flavors and foods with fewer ingredients, whereas older children are more adventurous. In this recipe you can add all the suggested vegetables or just a couple. Pick the ones your child likes, or even better, get him to choose the veggies and make the sandwich himself! Remember, children are more likely to eat a meal when they have been involved in preparing it."
1 (6 oz) can low-sodium, light tuna, drained
1/2 cup mixed vegetables, such as grated carrot, corn, diced celery, diced radishes and diced sweet red pepper
1 tbsp chopped fresh cilantro
2 tsp finely diced red onion or green onion (optional)
1 rounded tbsp mayonnaise
2 whole wheat bagels, cut in half horizontally
8 slices cucumber
2 handfuls arugula
The night before, combine tuna, your choice of vegetables, cilantro, onion (if using) and mayonnaise. Refrigerate overnight.
IN THE MORNING:
Lightly toast bagels.
Spread tuna mixture on bottom halves of bagels. Top with cucumber, arugula and remaining halves of bagels. Cut sandwiches in half and pack in reusable containers.
Serves 2
