Hi again,

Guess what I just ran across! A listing of recipes being
served at a festival and in the list:

Frozen Cheesecake on a Stick

Sue, your suggestion is a good one, but I think if a rich
cheesecake recipe is used (like NY Style) and a
not-too large pan, the popsicle stick should
slip in pretty easy and be sturdy enough to hold up
in the wedge.
