Recipe: German Potato Salad (low calorie)

Bavarian German Potato Salad

7 to 9 medium baking potatoes
1/2 cup vinegar
1/2 cup boiling water
1 ro 1 1/2 teaspoons salt
1 small onion finely chopped
Ground pepper

Boil potatoes (whole). Peel potatoes while hot, place in mixing bowl and mash with a fork.

Add equal parts vinegar and boiling water to taste. Add 1 to 1-1/2 teaspoon salt. Add 1 small to medium finely chopped onion; stir. Consistency should be like wet mashed potatoes.

Taste it and add a little more water and/or vinegar if necessary (depending on your own individual taste preferences). Mix well and transfer to serving bowl. Sprinkle with pepper.

Cover and let chill overnight (this is important).
