Gingerbread Cookies
1 c. sugar
1 c. shortening
1 c. molasses
1/2 c. coffee
2 eggs
4 1/2 c. flour
2 tsp. soda
1 tsp. salt
2 tsp. cinnamon
1 1/2 tsp. ginger
Mix sugar, shortening, molasses, coffee and eggs together until well blended. Add flour, soda, salt, cinnamon and ginger. Refrigerate for about 2 hours. Roll and cut out.
Bake at 350 degrees for 10 minutes on greased cookie sheet. Makes great gingerbread men.

1 tsp. ginger
1 tsp. cinnamon
1 c. cold coffee
Mix; roll out. Cut into cute shapes. Bake at 350 degrees for 10 to 15 minutes.

Cream shortening. Add sugar and egg; beat well. Add molasses, then add dry ingredients alternately with liquid. Add enough extra flour to make a stiff dough, about 2 to 3 more cups. Bake at 400 degrees for about 8 minutes. Don't overbake!
