Recipe(tried): Graeters and Busken Bakery Iced Tea Cookies - recipe notes
Desserts - Cookies, Brownies, BarsI followed the recipe posted for these cookies...minus the pecans bc Graeters and Busken iced tea cookie do not have pecans. I used All Purpose Flour instead of "Bread Flour" and they turned out fine. They really do taste like the tea cookies you buy in the box from Busken. The difference I would suggest, though, is to roll the 1/2-inch roll that you cut to about an inch in diameter, instead. And I would cut the "slices" a little skinnier. The Tea Cookies we are used to in Cincinnati are not as thick and are a bit larger in diameter. The icing is definitely thick, like the cookies we are used to. The 1/2-inch roll makes the cookie a little too small and thick. Needs to be a little flatter and rounder. But all-in-all...this is the only recipe I found and it seems to be pretty darn close! And at about $10/lb for a box at Kroger...it's nice to have the recipe! You could probably put the dough into a cookie press to scallop the edges...that would make them a little prettier.
