Recipe: English Muffin Pizzas (using anchovy paste, green olives, and bacon)

Pizza/Focaccia
ENGLISH MUFFIN PIZZAS

4 English muffins, halved
1/4 cup butter
2 tbsp. anchovy paste
4 tomatoes, sliced
8 slices processed cheddar cheese
4 green onions, sliced
Stuffed olives
8 slices bacon, cooked until almost crisp

Preheat broiler; toast muffins.

In bowl, beat together butter and anchovy paste. Spread a little on each muffin half. Arrange tomato slices on halves.

Cut cheese slices diagonally into 4 triangular shapes. Arrange on top of muffin halves. Broil until cheese melts.

Sprinkle green onions on top. Spear olives with wooden picks. Roll up bacon slices and secure each roll with one of the olive picks; use to garnish pizzas.

Servings: 4
