Recipe: Hashed Brown Rice (using cooked rice)

HASHED BROWN RICE

"This is a good as it is fast and easy to make. A crispy dish to serve with broiled steak or chicken."

3 cups cooked rice
3 tablespoons flour
1/4 cup milk
2 tablespoons olive oil
1/2 cup chopped onion
Salt and freshly ground black pepper (to taste)

Combine cooked rice, flour and milk in bowl. Reserve.

Saute onion in olive oil in nonstick skillet until limp and golden.

Mix rice mixture with onion; season with salt and pepper to taste.

Press onion-rice mixture down firmly in skillet. (Pan should still be greased with oil. If not, add some.) Cook over medium heat until bottom is golden brown.

Turn out onto serving dish, brown side up. Serve immediately.

Makes 4 servings
