Recipe: Oriental Rice Pilaf

ORIENTAL RICE PILAF

1 cup Uncle Ben's Converted Brand Rice
2 1/2 cups chicken broth
3 tablespoons soy sauce
1/2 teaspoon salt
1/8 teaspoon ground ginger
3 cups coarsely shredded cabbage
1/2 cup sliced green onions with tops
1/2 cup thin diagonally sliced carrots

Combine rice, chicken broth, soy sauce, salt and ginger in 10-inch skillet. Bring to boil; reduce heat. Cover tightly and simmer 20 minutes.

Remove from heat and stir in remaining ingredients. Let stand, covered, until all liquid is absorbed, about 5 minutes.

Makes 6 to 8 servings
