Recipe(tried): Healthy Finger Foods - Cottage Cheese Stuffed Celery and Cucumber Pitas
Appetizers and SnacksHow about the cottage cheese stuffed celery sticks?
Cottage Stuffed Celery
1/2 cup of low fat cottage cheese
2 to 3 teaspoons of chopped green onions or chopped chives
1/8 teaspoon of prepared horseradish, if desired
1/8 teaspoon of Worcestershire sauce
3 to 4 stalks celery, cut into 3 inch pieces
In a small bowl, combine the cottage cheese, onions, horseradish and Worcestershire sauce, mix well. Spoon or pipe mixture into each celery piece, using 2 teaspoons for each. Garnish as desired. For the best results, serve within 2 hours. Makes 12 to 15 appetizers
It is really easy and tasty.
Another I like is Cucumber Pitas.
1 Cucumber sliced (I peel mine first)
1 8oz pkg. cream cheese or neufchatel cheese, softened
1 pkg. Italian dressing mix
Pitas
Lemon pepper
Blend cream cheese with dressing mix. Spread on pitas. Top with cucumber slices. Sprinkle with lemon pepper. Quarter pitas.
