HEDGEHOG

Number: 24

Utensil: greased slab pan

Ingredients:

1/2 cup (125 g) butter
2/3 cup (140 g) caster sugar
2 tablespoons cocoa
2 tablespoons coconut
1 egg (60's), beaten
3/4 cup chopped walnuts and glace cherries, mixed
1/2 teaspoon vanilla
2 cups (180 g) crushed sweet biscuits

Method:

1.Melt butter and sugar, add cocoa and mix well.
2.Remove from heat and stir in coconut and egg.
3.Add walnuts, cherries and vanilla.
4.Stir in biscuit crumbs and mix well.
5.Press into pan and chill.
6. Frost with chocolate glaze
7.Cut into fingers.

CHOCOLATE GLACE ICING

Source: "Cookery the Australian Way"

Ingredients:

2/3 cup (100g) icing sugar
1 tablespoon boiling water
2 teaspoons cocoa
4 drops vanilla

Method 1:

1.Sift icing sugar, blend cocoa with water and stir into icing sugar. Add
four drops vanilla and a little more water if
necessary so that the icing becomes the consistency of thick treacle...
2.Place basin of icing over hot water and stir until icing is thin enough to
spread evenly. Do not overheat as the sugar may
crystallize.

Method 2:

1.Sift icing sugar into a basin. Blend cocoa with boiling water. Add vanilla
and cocoa/water mixture to icing sugar, and
mix.
2.Continue to add water , beating well, until it runs smoothly and slowly to
cover surface.
